Eating meat increases the risk of type 2 diabetes by up to 23 percent, according to a new study published in the American Journal of Epidemiology.

The researchers, who conducted the study that people who eat a large amount of red meat are at a high risk of diabetes compared to those who eat it moderately.

Eating too much poultry would also increase the risk of type 2 diabetes by about 15 percent, but this relationship does not apply to fish and seafood, the researchers said.

Eating red meat and poultry may increase the risk of type 2 diabetes because of their high iron content and other substances that increase the body's ability to develop insulin resistance, the researchers report.

To confirm this theory, the researchers analyzed information on 63,257 adults between the ages of 45-74 and asked them to fill out forms containing questions about their diet.
After analyzing the information, the researchers found:

- Eating red meat significantly increased the risk of diabetes by 23%

- Eating poultry significantly increases the risk of diabetes by 15%

- There was no relationship between eating fish and seafood and having diabetes.

Eating certain parts of poultry, such as the chest rather than the thighs, may be more healthful because of the low proportion of chemicals responsible for raising the risk of diabetes, the researchers said.

The researchers said the results did not mean stopping eating red meat and poultry, but reducing the amount of them.
